Sundried Tomato, Mascarpone and Spinach Tagliatelle

Ingredients
300g Homepride Meatball Sauce
160g dried tagliatelle (or pasta of your choice)
100g washed baby spinach
100g sundried tomatoes (drained and roughly chopped)
2 tbsp mascarpone or soft cheese
1 tbsp red pesto
Grated parmesan and pine nuts to garnish (optional)
Method
- Cook the pasta as instructed and drain.
- Heat the Homepride Meatball Sauce in a pan. Add the chopped sundried tomatoes and spinach, stir in and cook for 1 minute or until the spinach is cooked/wilted.
- Add the cooked pasta and mascarpone and stir well until hot throughout.
Top with a spoonful of pesto, pine nuts and a generous sprinkle of parmesan.
