Pork Tacos

Ingredients
½ jar Homepride Peri Peri Sauce
800g piece pork belly (boneless and rind removed)
1 bunch spring onions
1/2 bunch fresh coriander
1 pack of corn tacos/taco shells/mini tortillas
Chipotle Mayo
100g mayonnaise
Juice of 1 lime
1 tbsp chipotle chilli paste
Salsa
150g tomatoes (diced)
2 tbsp red onion (finely diced)
1 jalapeno (finely diced)
Juice of 1 lime
1 tbsp fresh coriander (chopped)
Salt to season
Method
- Place the pork belly in a roasting tray and cover with foil. Cook for 4 – 6 hours at 160c. When cooked the Pork should fall to pieces/pull apart without any resistance.
- Once the Pork is cooked, pull or shred to small pieces (this can be done the day before if required).
- In a baking dish, mix the Homepride Peri Peri Sauce with the pulled pork and heat for around 20/25 minutes in the oven or until piping hot. Stir a couple of times during heating.
- To make the mayo, mix all the ingredients (you can add more chipotle paste if you like it a little hotter).
- To make the salsa, combine the ingredients and season to taste.
- Heat the tacos as instructed, then top with the Peri Peri Pulled Pork.
Serve with a drizzle of salsa and mayo to finish.
