Katsu Chicken Rice Bowl

Ingredients
1 Jar Homepride Curry Sauce
300g (raw) jasmine or sushi rice
4 breaded chicken breasts
1 carrot
1 bunch of spring onions
¼ cucumber
6 radishes (thinly sliced)
A handful of edamame beans
1 tbsp sesame seeds
Salad Dressing
1 tbsp rice wine vinegar
1 tbsp mirin
1 tbsp soy sauce
1 tsp miso paste
1 tbsp sugar
Method
- Cook the rice and chicken as per instructions on the packets.
- While the rice and chicken are cooking, put the Homepride Curry Sauce in a pan to heat up.
- In a mixing bowl, add the dressing ingredients and mix together.
- Use a peeler to make ribbons of the carrot and cucumber, add to the bowl with the dressing.
- Add the edamame beans, sliced spring onion and radish to the bowl and mix.
- To serve, place the cooked rice at the base of 4 bowls. Share the sauce onto one side of the rice.
- Slice the chicken and put over the sauce.
Serve with mixed salad and a sprinkle of sesame seeds.
