Crispy Salt & Pepper Cauliflower
Serves 2 (double ingredients for a family of 4)

Ingredients
½ a Jar Homepride Curry Sauce
300g cauliflower florets
1 bunch of spring onions (chopped to 1 inch pieces)
1 red onion (cut into thin wedges)
1 fresh red chilli (sliced)
2 cloves of garlic or a sprinkle of garlic powder
1 small carrot (thinly sliced)
2 tbsp sesame oil
1 packet of tempura batter mix
Pinch of salt
Pinch of cracked black pepper
Plain flour for dusting
Fresh coriander to garnish
Method
- Make up the batter mix as instructed.
- Dust the Cauliflower florets in flour. Deep or shallow fry until golden brown and cooked through.
- While the Cauliflower is cooking, heat a large pan or wok. Add the Onion, Spring Onion and Carrot and stir fry until golden brown. Add the Red Chilli and Garlic fry for a further 30 seconds (taking care not to burn).
- Add the fried Cauliflower to the pan along with the Salt and Pepper and stir fry to mix together. Once combined, add the Sesame oil.
- In a separate pan heat up the Homepride Curry sauce.
- Serve the fried Cauliflower with the sauce and top with the chopped Coriander.
Serve with Noodles or Rice.
