Crispy Salt & Pepper Cauliflower

Serves 2 (double ingredients for a family of 4) 

Ingredients

½ a Jar Homepride Curry Sauce 
300g cauliflower florets 
1 bunch of spring onions (chopped to 1 inch pieces) 
1 red onion (cut into thin wedges) 
1 fresh red chilli (sliced) 
2 cloves of garlic or a sprinkle of garlic powder 
1 small carrot (thinly sliced) 
2 tbsp sesame oil 
1 packet of tempura batter mix 
Pinch of salt  
Pinch of cracked black pepper
Plain flour for dusting 
Fresh coriander to garnish 

Method

  1. Make up the batter mix as instructed. 
  2. Dust the Cauliflower florets in flour.  Deep or shallow fry until golden brown and cooked through. 
  3. While the Cauliflower is cooking, heat a large pan or wok.  Add the Onion, Spring Onion and Carrot and stir fry until golden brown.  Add the Red Chilli and Garlic fry for a further 30 seconds (taking care not to burn). 
  4. Add the fried Cauliflower to the pan along with the Salt and Pepper and stir fry to mix together. Once combined, add the Sesame oil. 
  5. In a separate pan heat up the Homepride Curry sauce.  
  6. Serve the fried Cauliflower with the sauce and top with the chopped Coriander. 

 

Serve with Noodles or Rice.
